Savagnin
The Jura white grape, made topped-up or aged under a yeast veil.
Savagnin is the grape of vin jaune. It also makes topped-up whites, with barrels refilled to limit oxidation, and wines aged under a yeast veil. Savagnin and Sauvignon Blanc are different grapes.
What to notice
Compare a topped-up Savagnin and vin jaune with mature Comté.
