Consider sauces, cooking and side dishes to offer several pairings, including vegetarian barbecue dishes.

Start with the actual recipe

A barbecue does not have one flavour. Separate ingredient, cooking and sauce: lemon chicken, smoky aubergine and steak with a sweet glaze raise different questions. Write down the dominant feature, whether acidity, sweetness, spice, smoke or richness. A wine your guests already enjoy is a better starting point than a colour rule based solely on the word “grilled”.

Offer options rather than rules

Try a fresh white alongside a complete lemon-seasoned bite. For grilled meat with little sweetness, compare two reds with different textures. With a sweet barbecue sauce, see whether the wine keeps its fruit or seems harsh. These are starting points to test, not guaranteed matches. Serving sauce separately helps you observe the difference it makes.

Include vegetables and sides

Aubergine with yoghurt, mushroom skewers and buttered corn each deserve consideration. The garnish can matter more than the vegetable’s name. Try wine with the sauce and then without it. For several dishes, offer a versatile style and one contrasting alternative rather than opening a separate bottle for every plate. Record which actual recipe suited each option.

Plan outdoor service

Wine and glasses can warm in sunshine. Keep bottles in shade and use appropriate cooling without making extreme cold conceal expression. Note the serving conditions when comparing wines. Provide alcohol-free drinks too and let people choose. Bottle format and the number of courses should not become consumption targets. Practical service can change the experience as much as the original pairing choice.
